Ezkhaana

Ezkhaana is tucked away in Chinchwad, and it is a pretty busy little spot most days. We started this because we liked the idea of getting food out to people without all the fuss of a big sit-down restaurant. The kitchen is where everything happens. It stays hot and there is always something bubbling on the stove or being chopped on the boards. We don't have a big sign or a fancy entrance, just the smell of spices that lets you know you are in the right place. Most of our day is spent prepping vegetables and making sure the orders are packed up correctly so they don't leak during the ride. It gets chaotic around dinner time, with delivery guys coming in and out and the phone ringing constantly. We have a small table in the back where we take turns eating our own meals when we get a break. The walls are a bit stained from the steam, but that’s just part of a working kitchen. We are not chefs in tall hats, just people who know how to cook a decent meal that tastes like home. It is hard work on your feet all day, but we like the rhythm of it. We just keep our heads down and keep the food moving to the customers in the neighborhood. Every night we clean down the counters and get ready to do the same thing again tomorrow.
