We are tucked away in the New Timber Market area of Wakad. It’s a bit of an unusual spot for a bakery, surrounded by wood shops and hardware stores, but we like it here. The smell of fresh bread mixes with the scent of sawdust from the neighbors sometimes. Our shop is pretty basic, with just a few racks and a cooling area. We start early in the morning when it's still dark outside to get everything ready. It’s just a few of us working the ovens and handling the counter. The flour gets everywhere, no matter how much we sweep. Our customers are mostly people working in the market or locals who live just around the corner. We don’t have fancy packaging or gold-leaf decorations. Everything is just wrapped in simple paper and put in a bag. Sometimes the crust on the bread is a little darker than other days, but that's just the oven being temperamental. We don't have a big sign out front, just enough for people to find us. It’s a small operation and we like keeping it that way. We don't want to grow too big and lose track of what we're doing. It’s just about getting the baking done and seeing the regulars every day. The work is hard on the hands, but it feels good to finish a batch and see it sell out.
