Our shop is Shri Sainik Sweets Private Limited. You can find us at Bhaktiyari, on Muir Road. We are at Plot Number 5. This is in Allahabad, and we have been in this spot for a while now. The street can get pretty noisy with all the traffic. In the kitchen, we deal with a lot of milk and sugar. Making Indian sweets is a slow process. You have to stand over the big pots for hours. It gets tiring on the legs. We do not have any fancy marketing people. It is just us and the guys who help in the back. We use a lot of ghee and nuts. The floor is usually a bit sticky by the end of the day. We try to keep things organized at the Muir Road address. Sometimes we run out of things and have to rush to the market. Allahabad has its own pace. We follow that. We do not try to be anything we are not. We just make the sweets and put them out for people. The counter is usually full by noon. We spend the afternoons cleaning up and getting ready for the next day. It is a lot of repetitive work, stirring and shaping. We do not have a mission statement or anything like that. We just want to make sure the containers are full when people come in. That is our daily life here.
