We are located up on the fourth floor of a building in Kailash Nagar, right off the ECR. Carrying supplies up all those flights of stairs is probably the hardest part of our day. We do not have an elevator, so we have gotten quite fit just from the daily climb. From our windows, you can see the traffic moving along the East Coast Road toward Kottumpalayam. The kitchen space is where we spend almost all our time. It is a busy place with pots bubbling and timers going off. We do not use any industrial machines; most of what we do is done by hand with knives and spoons. The air is always filled with the smell of whatever is cooking that day. Jaibunissa is usually around to make sure things are running okay, but it is a pretty relaxed atmosphere most of the time. We eat our meals standing up half the time because we are so busy with orders. The walls could use a fresh coat of paint, and the floor is a bit stained from years of cooking, but it is clean where it matters. We do not have a marketing team or anyone like that. It is just us making food in a small kitchen and hoping the people who eat it are satisfied. It is practical work and it keeps us moving from morning till night.
