Our bakery is located at No.127 on Saint Theresa Street in Pondicherry. We have both the ground and the first floor, which gives us enough room to do the baking and also have some space for the flour sacks and the ovens. Saint Theresa Street is a nice area, fairly central, so it’s easy for people to stop by. We mostly focus on bread and simple baked goods that stay fresh. You can usually smell the yeast and the ovens from down the block when we start early in the morning. It’s a lot of manual labor, kneading dough and watching the timers. The ground floor is where most of the action happens, while the first floor is more for storage and some of the prep work. We’ve been in this building for some time now and have gotten used to the quirks of the old walls and the heat. Pondicherry has its own pace, and we try to stick to it. We don't do fancy cakes with lots of icing; we just stick to the basics that people want for their breakfast or dinner. It’s a small team here, just a few of us who know how to handle the heat of the kitchen and the ovens. Sometimes the humidity makes the dough act funny, so we have to adjust. It’s not a perfect science, but we’ve learned how to deal with it over the years of working here.
