Phulwari Sharif is a busy place. Near Sabazpura Mod, it gets really loud in the mornings. We start the day early at Aditi Namkin & Sweets Pvt. Ltd. while most people are still sleeping. The smell of hot oil and sugar fills the air pretty quickly. It is not a quiet job. We spend most of our time standing in the kitchen area or packing things into boxes. Sometimes the heat from the big pans gets to be a bit much, but that is just part of making snacks. People come in from the street and the shop gets crowded around tea time. It feels like we are always cleaning something or refilling the glass jars on the counters. We see the same faces every day, which is nice. Sabazpura Mod is right there, so traffic is always moving outside. Sometimes a truck blocks the view for a bit. It’s a simple routine. We get the flour and spices delivered, we mix everything up, and then we sell what we made. There is always a layer of flour on the table by midday. It’s hard work on the feet, but seeing the neighbors stop by makes it okay. We aren't doing anything fancy here, just making the usual namkins and sweets that people like to take home. The place is small but we make it work. We keep the counters wiped down as much as possible, though the sugar sticky always seems to find a way to stay. Dealing with the heat in the back and customers keeps us moving every single day.
