Our place is tucked away in Rampur, Danapur. Bibhuti Kumar runs things here now, taking over the space at 164. It is a family thing, really, with roots going back to Late Abdhesh Kumar. We make singharas and other snacks that people like to have with their evening chai. The kitchen starts getting busy early in the morning when the dough is being mixed. There is always a smell of frying oil and spices in the air around the house. It is not a factory with robots or anything. It is just us and a few helpers getting our hands dirty. We don’t have a big fancy sign or a glass front. Most people find us because they live nearby or heard about the food from a neighbor. Patna can be a hectic place, but Danapur feels a bit more grounded. We deal with the usual stuff like late deliveries of flour or the stove acting up. When the rains come, the street outside gets a bit muddy and things slow down, but we keep the fryers going. We aren’t trying to change the world. We just want to make sure the food tastes like it should and that we have enough for everyone who stops by. It is steady work and it keeps us busy from dawn till dusk most days of the week.
