Shiv Shankar Choubey is the one running things here at Ganapati Enclave in the Shantinagar area of Burnpur. It is a small dairy operation, what they call an OPC, which basically means it is mostly a one-man show with some help. We do not have a big office or a bunch of suits. We spend our time with the cattle and the milk pails. The morning starts very early, usually while it is still dark outside, because the milk has to be ready for the neighborhood before breakfast. Shantinagar is getting more crowded every year with new buildings, but we just keep doing our thing. The smell of hay and fresh milk is always around. We have some basic cooling equipment to keep things from spoiling in the West Bengal heat. It is a constant battle against the temperature. Sometimes the equipment breaks down and we have to scramble to get a mechanic out to Burnpur. We don’t use any fancy advertising. People just know where to find Shiv Shankar when they need fresh dairy. It is a lot of hard work, cleaning the stalls and making sure the animals are fed and healthy. There are no holidays in the dairy business because the cows do not take a break. We just try to provide something honest to the local community. It is a simple life, focused on the basics and making sure we do not let anything go to waste. You won't find us on any billboard.
