You can find us at Gauncar Wado in Batim. It’s a small part of Goa-Velha, away from the tourist beaches and all that noise. We deal with food here. It’s a small operation, mostly just family and a few neighbors helping out. The kitchen gets really warm in the middle of the day. We try to keep things simple. We don't have fancy packaging or big trucks. Most of what we do is just traditional stuff people around here have been eating forever. Sometimes the rain makes it hard to get work done, especially during the monsoon when the roof leaks a bit. We just wait it out. The house is old but it works for what we need. We've lived in this wado for a long time, so everyone knows where to find us if they need something. It’s not like a factory you see in the city. It’s more like a home that grew into a business. We get our ingredients from the local markets when they're fresh. Every day is a bit different depending on what we're making. We like the quiet life here in Batim. It’s peaceful, and we get to do what we know. There's no pressure to be huge. We just want to keep the stoves going and the food moving. It’s what we do. Sometimes the power goes out and we have to light some candles to see what we are doing in the back.
