Sojat Road Main Bazar is a busy place and we are right in the middle of all that noise. Our shop is where people come for their morning snacks or to buy boxes of sweets for a celebration. We open the shutters early when the market is still waking up. The first thing we do is put the tea on and start the deep fryer. You can smell the kachoris from down the street. We do not use any fancy advertising. The smell does the work for us. We have a small team of workers who have been with us for years. They know exactly how much cardamom or saffron to add without even measuring. It is all based on experience. We do not have much room for people to sit down, so most of our business is take-away. The counter is usually crowded in the evenings when people are heading home from work. They want to take a little treat for their kids. We try to keep the prices fair so everyone can afford a little something. Sometimes we have to tell people to wait a few minutes while a fresh batch is being fried. Nobody seems to mind because they want it hot. We are just a local shop trying to do things the old way. We do not change the recipes much because people like them as they are. This is just how we run the business.
