Shahi Lassi Wala is over in the Rani 3 area and it is a pretty straightforward place. We don't have a lot of items, just lassi that we make in big batches. I spend a lot of time churning the curd by hand because the machines we tried before kept breaking down. The clay pots we use stay damp and cool, which is important when the sun is hitting the front of the shop. We have a few wooden benches out front where people can sit, but most people just stand around and drink quickly. The floor is usually a bit wet from us washing the glasses over and over again. It is a very simple setup with just a counter and a few large containers. I get the milk from a local supplier every morning and if it doesn't arrive on time, we just have to wait. There are no fancy decorations on the walls, just a few old calendars. Sometimes the neighborhood kids come by and ask for the extra foam at the top. I’ve lived in Rani 3 my whole life so I know just about everyone who walks past the door. It isn't a big business, just a way to get through the day and provide something cold for people when they are walking in the heat. We stay open until the last pot is empty.
