Setting up the shop every morning at Nembeshwar Misthan Bhandar takes a lot of time and effort. We are right on the Ranakpur Rankpur Road so the dust from the passing trucks and buses is something we have to fight every single day. I start the milk boiling very early, long before the sun is even up properly. It is a lot of heavy lifting with the big iron pots and my back really feels it by the evening time. People stopping on their way to the temples or coming back from work are always in a rush. They want their sweets packed fast and they want them to be fresh from the tray. We try our best but sometimes the sugar syrup takes its own time to set right and you cannot hurry it. The floor gets a bit sticky around the counters by noon no matter how many times we wipe it down with a wet cloth. My brother handles the money at the front while I stay in the back near the heat of the stoves. We have been in this spot for a long time and the whole neighborhood has changed around us but the way we make our barfi hasn't changed much. It is hard work and the heat from the kitchen is tough in the summer months but seeing the same faces every day makes it okay. We do not have fancy glass displays or bright lights, just the same old cases we have always used.
