Rohat is a quiet enough place most of the time, but the Old Bus Stand area stays pretty active. That is where Mamta Sweets is located. We have been here for a good while, serving the people who live around here and the ones just passing through on the buses. The shop is not very large, but we make it work. I get here early to start the milk and sugar for the day’s batches. The morning air is usually nice before the dust from the buses starts kicking up. We have some glass cases where we display what we made that morning, though they tend to fog up when it is humid outside. It is just a few of us working here, so we do everything from the cooking to the cleaning. We don't use any fancy equipment, just the same pots and pans we have had for years. Sometimes the power goes out and we have to use candles or just work by the light from the door. It is a simple way to make a living, and we know our neighbors well. Most people stop in to talk for a minute while they wait for their order. We don't have any polished marketing; we just stay open and keep the sweets ready for whoever walks in. It is just a regular part of life here in Rohat, and we don't expect it to change much.
