If you are ever near Shiv Chouraha on Sardar Samand Road, you will find Mahalaxmi Rabory Bhandar. We are right at the crossroads. Most of our day is spent around the big iron pans. Making rabri takes a lot of time and patience. You have to keep stirring the milk so it doesn't burn on the bottom of the pan. The heat from the stove is quite something, especially during the summer. We get a lot of travelers stopping by because we are on the main road. They want something sweet before they continue their journey. We also have other small snacks, but the rabri is what people ask for the most. The shop gets a bit crowded in the evenings when the locals finish work and want a treat. We use a lot of milk every day, which comes in fresh from the nearby farms. It is a family thing, my brother and I take turns watching the pots. Shiv Chouraha is always noisy with horns and people shouting, but inside the shop, we just focus on the cooking. We don't use any fancy machines, just the old way of doing things. Sometimes we run out early if a big group comes through on a bus. It's hard to predict.
