Kundan Das Vaishnav Chaat Corner

Kundan Das Vaishnav Chaat Corner is a place we’ve been running on Mandia Road for quite some time now. It’s a humble setup, mostly focused on getting the food right rather than how the place looks. We start our work early in the morning, peeling a lot of potatoes and making fresh chutneys from scratch. The tamarind has to soak for hours to get that sour taste just right. People on Mandia Road know us for being consistent with what we serve. It’s a lot of work over a hot stove, especially when the weather is already warm. We don't have any fancy machines; most things are done by hand or with simple tools. The counter is usually crowded in the evenings when people are heading home from work. We try to be quick, but sometimes there’s a wait when the tikkis are still browning on the tawa. We keep a bucket of clean water and some soap for people to wash their hands, and we try to keep the area around the stall as clean as we can. It’s just a few of us working here, usually family or close friends. We don't do any delivery or online stuff; people just come and stand by the road to eat. We’ve had the same sign for years and it’s a bit faded, but everyone knows it’s us. It’s a steady life of serving snacks and talking to the locals who stop by.
