Starting at Govid Dairy at the Old Bus Stand means waking up while it is still dark outside. The milk arrives in big metal cans, and the first thing we do is get everything into the cooling units. The shop smells like fresh cream and cold water. We have white tiles on the walls that we scrub down every morning to keep things looking okay. Since we are near the bus stand, we get a lot of people stopping by for a quick glass of buttermilk or a packet of curd before they start their long journey. The floor is usually a bit damp from the ice and the cleaning we do. We don't have fancy furniture, just a sturdy counter and the big fridges that hum all day long. My hands are usually cold from handling the packets. In the evenings, it gets busy with people heading home who need milk for their tea or for dinner. We know most of the bus drivers and conductors who come by for a break. It is a fast-paced environment but we have our routine down. We don't do much talking unless it’s about how many liters someone needs. The metal ladles make a clinking sound against the pots, which is the main sound of our day. It’s honest work and it keeps the neighborhood fed. We close up once the last of the fresh stock is gone for the day.
