Life at Adarsh Dairy starts way before the sun even thinks about coming up. Being in Ranakpur Sadri, we are surrounded by a lot of quiet until the milk trucks arrive. We spend the first few hours of the day handling the heavy cans and making sure everything is cold. The smell of fresh milk is something you never really lose. It’s a wet job and the floor is almost always damp. We wear rubber boots mostly. People from the nearby houses come in with their steel containers early in the morning. They are usually half-asleep and we don't talk much, just do the measurements. By midday, it gets quiet and we have some time to clean the vats and the counters. Sadri is a nice place but the work is hard on the back. We don't have a big storefront with lights. It’s just a practical space for dairy work. Sometimes the cows wander right up to the door and wait for a snack. We don't mind. The machinery makes a constant humming sound that you stop hearing after a while. It’s an honest way to spend the day. We don't use any fancy labels or marketing. People know where the milk is and they come get it. That’s enough for us to keep going every day.
