About Punjabi Chehel Pehel – Art & Craft in North West Delhi
Our shop is number 383 in Pocket E 16, Sector 8 of Rohini. It’s a lively spot and we try to keep that energy going. In Punjabi, the name means a bit of hustle and bustle, and that’s exactly what it’s like here. We have the tandoor going from the afternoon until late at night. The heat from the coals is really something, especially in the summer months. We spend a lot of time slapping dough into the side of the oven. My arms get a bit singed sometimes, but you get used to it. Sector 8 is a good neighborhood with lots of families. They come out in the evenings for a walk and stop by for a meal. Shop No 383 is usually easy to spot because of the crowd waiting outside. We don’t have a lot of room inside, so people often eat standing up or take the food to their cars. We don't have any fancy uniforms, just plain aprons. We try to keep the music playing in the background to keep the mood up. It gets a bit loud when we have a lot of orders coming in at once. We don't use any fancy sauces, just the traditional spices we’ve always used. It’s a lot of work and our backs ache by the end of the night, but it’s what we do every day.
