Nawabs Restaurant

This branch of Nawabs is over on the Sector 110 Main Road, at 80-A. It’s a busy stretch of road, and there is always something happening outside. Inside, the kitchen is where most of the action happens. We have large pots that stay on the flame for hours. The air gets thick with the smell of what’s cooking, which is just part of the job. Most of the staff here lives nearby, so we know the area well. We don't have fancy decorations or anything like that. The walls are plain, and the tables are simple because we focus on the food more than the look of the place. We start our day by checking the supplies that come in from the market. Some days the onions are better than others, and we just deal with it. It’s a lot of repetitive work—chopping, stirring, and serving. We get a lot of regulars who live in the apartments around Sector 110. They usually want the same thing every time they come in. We don't have a big marketing plan; we just open the doors and start cooking. The heat from the stoves is intense, so we take turns stepping outside for a bit of air when it’s quiet. It’s just a normal restaurant run by people who have been doing this for years. We stay open late most nights to catch the dinner crowd before they head home.
