Our kitchen and office are located on the second floor at 2050/6 in Chuna Mandi. If you know Paharganj, you know it’s a maze of narrow streets and lots of people. We’re right in the middle of all that. The smell of spices is always hanging in the air around our place. It’s not a very big space, but we make the most of it. We spend our days prepping ingredients and making sure everything is ready for the orders. The stairs up to the second floor are a bit steep and narrow, which makes carrying supplies up a bit of a workout. We’ve got a small team that handles everything from the cooking to the packing. It gets pretty hot in the kitchen during the lunch rush, so we usually have all the windows open to catch whatever breeze comes through. We aren't a fancy restaurant with waiters; we’re more about getting the food prepared and out the door. The neighborhood is always noisy with the sounds of rikshaws and people shouting, but we’ve gotten used to it. Sometimes we have to hunt for specific ingredients in the local markets nearby if our regular suppliers are late. It’s a bit of a scramble every day, but we enjoy the energy of the area. We just try to make food that tastes like home and keep the business running as best as we can. After we finish the last order, we usually sit around and talk about the next day’s menu.
