Finding us at 485/2 in Katra Ishwar Bhawan requires a bit of walking through the crowded lanes of Khari Baoli. This is the heart of the old city's spice market, so the air is always thick with the smell of chili, turmeric, and all sorts of herbs. It makes you sneeze sometimes if you aren’t used to it. Our place is inside one of those old buildings with narrow staircases that have been worn down by years of people walking up and down. It’s not a fancy office at all. We have bags and containers of herbs sitting everywhere. The walls are a bit stained from the dust, and the lighting isn't the brightest. But it's where the real business happens. We spend our days weighing out things and talking to the traders who come in. Khari Baoli is a chaotic place, with laborers carrying heavy loads on their backs and carts pushing through the crowds. Our little corner in Katra Ishwar Bhawan is our sanctuary from that chaos, even though it’s busy in its own way. We’ve been part of this market for a long time. We don't use computers for everything; a lot is still written down in big books. It’s a traditional way of doing things, and it works for us. We drink a lot of water because of the spice dust. It's hard work, but it's what we know. We just focus on getting the herbs sorted and sold.
