We spend most of our time at the Sahzada Bagh spot. It's an industrial area, so it gets noisy and busy early in the morning. House No 308/9 is where we keep the ovens going. It isn't a fancy place with big signs, just a first-floor space where we handle the dough and the baking. Most of the people working here have been around for years. We know the neighbors and the delivery guys pretty well by now. North East Delhi can be a bit crowded, but it feels like home. Sometimes the flour gets everywhere, and the heat from the kitchen makes the summers tough, but we just get on with it. We don't have a big office or anything, just some desks near the prep tables. It's a small team. We usually start while most people are still sleeping so the products are ready to go out. The stairs up to the first floor are a bit narrow, which makes moving heavy sacks of grain a bit of a workout every single day. We don't spend much time on computers. Most of our work is done with our hands, checking the timers or cleaning up after a long shift. It's a straightforward life here in Delhi 110035. The traffic outside is always a mess, but you get used to the sound of trucks and scooters. We just focus on the bread and the orders we have to fill. We don't have a receptionist to greet you. Usually, someone just wipes their hands and comes over. We just try to keep things moving as best as we can every single day.
