Coal Kitchen

Coal Kitchen is tucked away in New Delhi. It's a place where we spend most of our time around the heat and the smells of the food cooking. We started this because we liked eating and wanted a spot of our own in the city. It’s not a huge place, but it gets the job done when people are hungry. New Delhi is always moving fast, so we try to keep things steady here. We have a few tables and a kitchen that stays pretty busy most nights. Sometimes the orders pile up and it gets a bit chaotic behind the scenes, but we manage to get through it. We aren't trying to be the fanciest place on the block. We just use what we have and make the food that we like. Our staff lives nearby, so we all walk or take the bus in. You might see us sitting outside on a break when it’s not too hot. We’ve had some regulars for a while now who know our names. It feels like a neighborhood spot even though the city is so big. We don't spend much time on fancy decorations. It's mostly about the stove and the ingredients we get every morning. Sometimes we run out of stuff, and that's just how it goes. We try to keep things simple and just focus on the daily grind of running a kitchen in the middle of Delhi. It's hard work, but we've gotten used to it.
