Our kitchen is tucked away in the NICE MIDC area over in Satpur. It’s an industrial spot, which suits us just fine because we make a lot of chapatis every single day. We are at Plot No. B-45, and if you come by in the morning, the smell of toasted flour is everywhere. It’s a simple setup with a few machines and a lot of hands making sure every flatbread looks right. We don't do anything else but this, focusing on getting the dough and the heat just right so they stay soft. It's hot work, standing over the griddles all day, but it’s what we do for the local shops and tiffin services. We aren't trying to be a five-star restaurant. We’re just a reliable source for something people eat with every meal. The floor is usually covered in a thin layer of flour, and the rollers are always humming. We don’t have a marketing department or a fancy website. Most people find us because they need a steady supply of fresh rotis and they know we’re here in Satpur. We’ve had some rough days when the power goes out or a machine breaks, but we usually figure it out. It’s a straightforward business, nothing more and nothing less. We just keep stacking the chapatis and sending them out the door to wherever they need to go next. It keeps us busy from dawn till dusk, but that is the way we like it.
