Our setup is over at Bohari Market on Dondaicha Road in Shahada. We operate out of the space shared with Goyal Hemchand Kailaschand. This isn't a retail shop where you come to browse. It’s more of an industrial spot for khandsari. We deal with the raw side of things. There’s a lot of machinery involved and it can get pretty loud during the peak season. We spend our days tracking the processing of the sugar. It’s a traditional way of doing things, even if we use some modern gear now. The floors are concrete and there are always stacks of bags waiting to be moved. We don't have a fancy office with air conditioning. Usually, we're just out there on the floor making sure the quality is what it should be. The market is a busy place with a lot of noise and dust. We’ve been part of this area for quite some time. It's not a glamorous job, but it’s what we know how to do. Most of the guys here are in work clothes and don't mind getting their hands dirty. We just get on with the work and don't make a big fuss about it. If the trucks are moving and the sugar is processing, then it’s a good day for us. There is always a lot of paperwork with the market authorities but we just handle it as it comes. It keeps us grounded in the local trade and the community around the market.
