If you walk through Ahmedabadi Bazar near Nehru Chawk, you will probably smell us before you see us. That is the thing about dealing in hing; the scent stays on your clothes and in your hair long after you leave the shop. Hindustan Hing Supplying Co. has been operating out of this spot for a long time. It is a small space, mostly filled with containers and the tools we use for weighing and packing. The bazar is always crowded, so getting supplies in and out is a bit of a struggle sometimes. We have to time things just right so the trucks can get through the narrow streets. We don't have any fancy displays or bright lights. It’s just us, some sturdy tables, and the product we sell. Most of our day is spent measuring out portions and talking to the regular buyers who have been coming to Nehru Chawk for years. It’s a lot of repetitive work, but we take it seriously. We aren't trying to be the biggest company out there. We just want to make sure the quality is decent and that we don't run out of stock when people need it. The floor is usually covered in a bit of dust, and the air is heavy, but we are used to it. It’s a local business run by people who live nearby and understand how the market works here.
