It’s a quiet area, mostly fields and small houses around us. We started the bakery because there wasn’t much nearby for fresh bread. Every morning starts very early, usually while it is still dark outside. The ovens take a while to get to the right temperature. We make bread and some local biscuits that people like. You can usually smell the baking from the main road. Debraj helps out with the space and the general running of things. It is a small team, just a couple of us doing the mixing and the baking. The flour gets on everything, including our hair and clothes. We don't have a big shop front, just the bakery where people can stop by. Sometimes the power goes out, which is a real pain when you have dough rising. We just have to deal with it and keep going. It’s not a fancy city bakery with glass cases. Everything is simple and practical here. We use old trays that have seen better days but still work fine. It’s a lot of standing on your feet all day. But we like being part of the village life in Boro Anduli.
