Taco Fresco Restaurants

We are over in Khar Mumbai, right near the GPO 8. Most days start pretty early when the crates of tomatoes and onions arrive. It’s a bit cramped in the back but we make it work with the space we have. The staff mostly lives in the neighborhood so they just walk in every morning. Some of the guys have been working here for years now and they know exactly where everything is kept. We didn't really plan on being a big thing, it just sort of happened because people needed a place to eat that wasn't too expensive or slow. The fans in the dining area make a lot of noise but nobody seems to mind it much. Sometimes it gets really hot in the kitchen during the afternoon shift, especially when the stove is going full blast. We just keep the music playing on a small radio and get through the orders as they come. There’s a lot of chopping involved every morning before we open. On rainy days the roof leaks a little near the back door, so we just put a bucket there and keep moving. It’s just how it is. Khar is a busy place and there’s always people walking by looking for something quick. We try to keep the tables clean but when it’s busy, things get a bit messy for a while. You can see the street from the front window and it's always full of cars and people rushing to the post office. It’s not a fancy place, just a kitchen and some chairs.
