Over at Dongri Nanjappa Circle 151/153, things are almost always moving. This part of town doesn’t really sleep much, and our kitchen reflects that. We have these massive pots that are usually simmering with something heavy and rich. The cooks have been doing this for a long time, so they move around each other without even looking. It gets hot in the back, especially during the dinner rush when the orders start piling up on the spindle. We don’t go for anything flashy with the seating. It’s just solid tables and chairs that can handle a lot of people coming and going. You’ll hear the sound of the traffic from the circle outside mixing with the chatter of families eating together. Sometimes the floor gets a bit messy when it’s raining or when it’s really busy, but we try to keep a mop handy. It’s just a regular place where people come when they are hungry for a proper meal. We don’t have a big marketing team or anything like that; it’s just us and the food. We spend the afternoons prepping meat and vegetables so we are ready for the evening. It’s a lot of manual labor, lifting heavy bags and stirring big vats. We just keep our heads down and do what needs to be done to keep the place running every single day.
