Croissants Etc is located out in Andheri East, which is a busy part of the city with lots of offices and traffic. We start work when it’s still dark outside so that the ovens are ready by the time the first commuters show up. The smell of baking dough usually fills up the whole street for a bit, which is nice. It’s a simple setup we have here, with a few counters and some cooling racks in the back. The floor is concrete and gets a bit dusty from all the flour, so we are always sweeping.
