Cochoa

The Bharat Industrial Premises in Bhandup West is where we spend most of our lives. It’s right opposite Asian Paints on LBS Marg, so you can’t really miss the turn. Cochoa is tucked away inside, and usually, you can smell what we’re doing before you see the door. It’s a bit of a maze in this building, with different workshops doing all sorts of things, but our unit is where the sweet stuff happens. We have machines running most of the day and workers moving boxes back and forth. It’s not a quiet place. Mumbai is loud to begin with, and when you add industrial mixers and the hum of the cooling units, it gets even noisier. We started small, just trying to make things that people would actually enjoy eating. We don’t spend much time on fancy decorations for the office. Most of the space is taken up by ingredients and packaging materials. Sometimes the heat in Bhandup makes the work tricky, but we’ve got our routine down. We handle everything right here on the floor. It’s hard work, and by the end of the shift, everyone is pretty tired. We just focus on getting the batches right and making sure the deliveries are ready for the vans. It’s a basic operation, run by people who know their way around a kitchen and a factory floor.
