We run Sweet Desire out of apartment 325 in the Siffin building on Dr Ambedkar Road. Bandra West is always busy and loud, but once you get inside the building, it's a bit quieter. This isn't a big commercial bakery with a storefront or large signs. It’s more of a home-style setup where we make various sweets and desserts. The kitchen is almost always occupied with cooling trays and mixing bowls. We started this because we liked making stuff for friends, and it just grew from there. Sometimes the oven timer goes off and we’re busy with something else, so things get a little extra crispy or dark. We don't use those perfect factory molds, so every batch looks a little different. That’s just part of how we do things here. The delivery guys often get confused finding the right entrance to the apartment block, so we end up going down to the street to meet them quite a bit. It’s a lot of whisking, sugar everywhere, and checking the fridge space. We don't have a big staff, just a couple of us handling the orders that come in. Most of our day is spent cleaning up flour or waiting for things to set in the freezer. It’s a small operation and it can get a bit hectic in that kitchen, but we manage to get the boxes out on time. We just keep making what we know how to make.
