Down in Lokhandwala Complex in Andheri West, you will find Sardar Ji'S Kitchen. We are tucked away in Unit No. 14 of Building No. 2, which is part of the Kamdhenu Apna Ghar C.H.S. Ltd. It is a very busy part of Mumbai, and there is always something going on outside our door. The kitchen gets hot, especially during the lunch and dinner rushes when all the burners are going at once. We spend our mornings chopping vegetables, prepping spices, and making sure we have enough supplies for the day. It is a tight space, but we have a good system down after working there for a while. You can hear the sounds of the neighborhood all day long—car horns, people talking, and the general buzz of Andheri. Our walls are mostly covered in order slips and schedules. It isn't a place for fancy decorations; it is a place for cooking. We all wear our aprons and just get to work as soon as we arrive. Sometimes the deliveries for ingredients arrive late because of the traffic on the main road, and we have to scramble a bit. But that is just life in this part of the city. We focus on getting the food right and making sure it gets out to the customers while it is still hot. It’s a lot of hard work and long hours on our feet, but we wouldn't have it any other way.
