You can find Project Peacock Distilleries Private Limited over at Vikas Compound on C G Gidwani Road. We are in suite 402. Our business is all about distilling, which is a slow and careful process. We aren't a huge factory; we operate out of this compound in Mumbai. The area is a bit industrial, which fits what we do. Inside, we have our equipment and a small space for the paperwork. It’s not a glamorous job. There is a lot of cleaning, measuring, and waiting. We spend a lot of time checking the stills and making sure everything is running right. The team is small, and we all pitch in with whatever needs doing, whether it’s moving bottles or checking labels. We don’t have a flashy entrance or a big sign. Most people wouldn't even know we are here unless they were looking for us. It’s a practical workspace where we focus on the craft of distilling. Sometimes the Mumbai humidity makes the work a bit tougher, but we’ve learned to manage. We aren't interested in corporate talk. We just focus on the liquids we produce and try to get the balance right. It’s a quiet life in the office most days, punctuated by the sounds of the machinery. We’ve been here for a while and the compound feels like home. We just take it one day at a time and keep working until the bottles are filled and capped.
