You can find us at Akruti Sankul on Tilak Road. We’re in Flat 405/B, which isn't your typical storefront on the ground level, but it works for what we do every day. Tilak Road is always packed with traffic and people moving around, which we like because it feels alive. We’ve been here in Pune City for a while now, just trying to put out food that we’d want to eat ourselves at the end of a long shift. The kitchen is usually where you’ll find most of the action happening. We don’t have a big staff, so everyone chips in with the cooking, the serving, and even the cleaning when things get messy. It’s not always pretty, and sometimes the floors need a good scrub after a long day of work, but that’s just how it goes in this business. We buy our ingredients from the local markets nearby because it’s easier and those sellers know us by name now. We aren't trying to be the most famous place in town or anything like that. We just want to keep the lights on and the stove hot for the next order. Some days are slow, and we just sit around the table talking about what to add to the menu next or how to fix a leaky tap. Other days, we can barely keep up with the rush. It’s a simple life running a restaurant here. We don’t use any fancy words to describe what we do. We just cook and serve, and then we get ready to do it all over again the next morning.
