Our place is tucked away in Gala 14 of the Ambika Society, right over in Malad West. If you are looking for us, we are near the fire brigade, which is usually the easiest way to tell people where to go. Gate number one is where you enter the society. Malwani can be a crowded area, and Mumbai City is always moving fast, so it gets noisy outside our door. Bakehaven Confectionaries Llp has been operating out of this spot for a bit. It’s a basic setup, really. We spend most of our hours inside this gala, just handling the daily production and making sure orders are ready. It’s not one of those shiny shops you see in the malls. It’s a bit industrial, with concrete floors and a lot of equipment taking up space. Sometimes the delivery trucks have a hard time getting through the narrow lanes around Gate 1, but we make it work. We’ve got a small team here and we all know each other well. Most mornings start early, before the sun is even fully up, because that’s when the work gets done best. We aren't trying to be anything big, just a local business in Mumbai doing what we know how to do. The humidity in Malad can be tough on the sweets, so we have to watch that constantly. It’s just us here, working. Sometimes the rain gets heavy and leaks a bit near the door, but we just mop it up and keep going.
