Our kitchen is on the ground floor of the Shree Ram Prasad building over in Matunga. It’s right near the BMC ward office on Bhaudaji Road, so there are always people walking past the window. We mostly just do vegetarian stuff here, the kind of meals you’d find in a regular home kitchen. The space is pretty compact, but we have managed to fit everything we need in there. You’ll usually hear the sound of pressure cookers whistling and the chopping of vegetables throughout the day. We don’t use any meat here at all, just fresh produce and grains. The heat from the stoves makes the room quite warm, especially in the middle of the day. We have a few tables but it’s mostly about getting the cooking done. Matunga is a nice area with a lot of old buildings and trees, so the vibe is pretty relaxed compared to other parts of Mumbai. Sometimes we run out of a certain vegetable and someone has to run out to the market nearby to grab some more. It’s not a corporate operation, just a bunch of us in the kitchen making food. We keep the place clean as much as we can, but a kitchen is a kitchen. There is always a smudge of flour or a stray mustard seed somewhere on the counter. We just keep at it and focus on the daily chores.
