Down here at Plot No. 72 in Lalu Nagla, we spend our days working on H D S Masale. It’s out near the Post Chamara area in Rampur. It’s more of a rural setting than a city one, which we like because there is more space to breathe. The plot is big enough for what we need. When you’re dealing with masale, you get used to the smells pretty quickly. Some days the air is thick with the scent of different spices, and you can smell it even before you get to our gate. We don't have a lot of fancy machinery, just the stuff that works and gets the job done right. It’s a lot of manual work, honestly. We spend a lot of time checking the quality and making sure things are being handled properly. Rampur is a good place for this kind of work. The locals know us and we know them. It’s not like those big factories you see in the city where nobody knows anyone’s name. Here, we talk to the neighbors and the people who bring us the raw materials. Sometimes the weather makes things difficult, especially when it rains and the roads get muddy around Lalu Nagla, but we just keep going. It’s a basic life, but it’s our life. We’re just regular people trying to make a decent product that we wouldn't mind using in our own kitchens.
