Gulati Chicken

We have a small shop, number 1, on the main Haibatpur Road in Derabassi. It’s quite close to Gulmohar City, so we get a lot of people coming over from those apartments when they don't feel like cooking at home. Derabassi is on the way to Chandigarh, so the road is always busy with cars and bikes. The shop is simple, mostly just a place to cook and a few spots to stand or sit. We focus on chicken, and the smell of the spices usually drifts out onto the road in the evenings. It can get a bit smoky inside when the grill is full, but that’s just how it is. We aren't some big chain with polished floors and uniforms. We wear what’s comfortable and focus on the food. The Haibatpur Road area is still developing, so there’s often some construction noise or dust flying around. We just keep the shutters up and the fire going. My hands usually smell like onions and spices by the end of the shift. We don't have a mission statement or any of that corporate talk. We just want to sell enough chicken to pay the bills and keep the shop running for another day. It’s hard work, standing on your feet for hours, but seeing a customer enjoy their meal makes it alright. We’ve been here long enough that most people in the local area know us by name now.
