If you are looking for us, we are out in Barmi, Jagraon. Most people around here just call us Gopi Taddur Wala because the tandoor is the main thing we do. We spend most of our time standing over the hot clay oven, slapping rotis and naan against the sides. It is hard work, especially when the summer heat hits, but someone has to do it. We don't have a big fancy restaurant. It is more of a local place where you get your bread fresh and hot. Sometimes we help out with bigger orders for local parties, but mostly it's just the daily routine for the people living in the area. We start the fire early so the coals are just right by the time the first customers show up. The shop is pretty basic, just enough room for the tandoor and a place to prep the dough. We don't use any fancy machines, just our hands and the heat of the oven. It’s been this way for a long time. Jagraon is a busy place, and we are just one small part of it. We don't try to be anything we aren't. We just focus on making sure the bread isn't burnt and that there is enough for everyone who comes by. It’s a simple business, but it keeps us busy and the community fed.
