Our place is out in Purusottampur, at Suraj Sahni’s house in Pakari. It is a rural area, very different from the big cities. We make snacks here. It is a small operation, mostly just a few rooms where we do the frying and the packaging. We don't have any big automated machines. Most of the work is done by the hands of people from the village. The smell of the spices we use is very strong, and you can usually smell it from the road before you even see the house. We use local recipes that have been around for a long time. Suraj is always there to keep an eye on things. We don't have a marketing department or a sales team. We just sell our snacks to the local shops and wholesalers. The packaging is simple, nothing flashy. We spend our days making sure the oil is the right temperature and the snacks come out crispy. It gets very hot in the summer, especially near the big frying pans. We take breaks under the trees outside when it gets too much. It is a simple life and a simple business. We don't have a lot of rules, we just know how the work should be done. We are happy just being a part of the local community and providing snacks that people like.
