We’re over at Bagh Amberpet. Our setup is at Plots 53 and 54. It’s mostly about pickles here. Specifically the traditional kind like avakaya. We grew up eating this stuff every day. Eventually, we decided to make a business out of it. It’s a seasonal thing mostly. When the mangoes are ready, it’s all hands on deck. We have piles of fruit everywhere. Everyone is busy cutting and salting. It’s a lot of work and your hands will definitely smell like spices for a long time. We don't use a lot of big machines. Most of the mixing and packing is done by hand. We think it just tastes better that way. It’s how our grandmothers did it, so that’s how we do it too. We have these big jars lined up in the back. They have to sit for a while for the flavors to really get in there. We don't have any fancy labels or big advertisements. We just rely on people tasting it and telling their friends. It’s a small operation. A few of us do everything from the buying to the bottling. Sometimes it gets stressful when we have too many orders at once. But we just take it one jar at a time. We like being in Bagh Amberpet. It’s a good neighborhood with people who appreciate traditional food. It keeps us busy and the kitchen is always smelling like home.
