Pandiyan Biscuits

We are located at 1/17 Kamaraj Street inside the Taj Complex in Sirkali. The best thing about working here is definitely the smell of the biscuits when they come out of the oven. Pandiyan Biscuits is a small operation, and we mostly serve the people in the local neighborhood. The Taj Complex is a busy little place with other shops nearby, so there is always someone walking past our door. We start early in the morning to get the dough ready and the ovens heated up. It’s a lot of physical work, lifting heavy trays and bags of flour. We don't have any big automated machines; we do most of it by hand or with simple tools. Our biscuits aren't perfectly shaped like the ones you buy in the supermarket, but they taste like they were made in a real kitchen. We have some regulars who come in every single day for their tea-time snacks. Sometimes we run out of certain items before the day is over, and we just have to tell people to come back tomorrow. We don't have a big corporate office or a sales team. It’s just us in the back doing the baking and one person at the front handling the cash. The heat from the ovens can be a lot during the summer months, but we are used to it by now. It’s a good, honest way to make a living and keep everyone fed.
