If you drive down the G. T. Road towards Nijjerpura in the Amritsar district, you will find Punjab Milk Food Co. We are right there where the road gets busy with all the local traffic. Our work revolves around milk. It arrives early in the morning in big metal cans from the nearby farms. We have to get it sorted and into the tanks before it gets too warm. The building is mostly concrete and stainless steel. It stays cool inside because of the refrigeration, which is nice during the Punjab summers. We make different kinds of dairy products. It involves a lot of cleaning. You spend half your day washing floors and machines because milk goes sour fast if you aren't careful. We have a few guys who have been doing this for twenty years. They can tell if a batch is good just by the way it looks. There is no corporate manual here; we just know the steps because we do them every single day. The office is just a small room with a window that looks out onto the loading dock. We drink a lot of lassi when it is hot. It is hard work and your back usually hurts by the end of the shift, but it is what we know how to do. We just focus on getting the milk processed and sent out to the shops in the city.
