Down here in Puratoli, English Bazar, things move at a steady pace. Crispy Momo is just a small spot where we make food every day. If you live in Malda, you probably know the area around the bazar. It’s always crowded and noisy, but that’s the best part about it. We aren't a big chain with hundreds of branches. It’s just us in this little kitchen, prepping the dough and the fillings every morning. We don't have fancy menus with professional photos. We just write what we have on a board. Most of our time is spent over the steam or the frying pans. It’s hot work, especially in the summer months. We get a mix of people—students coming from school, folks heading home from work, and the occasional traveler. We don't do much in the way of advertising. Usually, people just smell the food or see their friends eating here. We use simple ingredients and try to keep things fresh. The shop isn't very large, so people often eat standing up or take their orders to go. We’ve had some long days when the rain keeps people inside, and other days where we run out of everything by six in the evening. It’s just how the food business goes in a place like this. We like seeing the same faces every week. It’s a good way to earn a living in English Bazar.
