Our setup is at E-525 in Phase VI of Ludhiana, right inside the Varun Auto Industries premises. It’s a bit of an unusual spot for a bakery since the whole area is full of machine parts and heavy industry. You can hear the sounds of metal clanging and engines running all day long. We started our baking business here because the space worked for us. We get started very early in the morning when most people are still sleeping. The smell of fresh bread and flour is a big contrast to the industrial odors of the neighborhood. Our space is functional and mostly taken up by ovens and big mixing bowls. We don't have a storefront where you can come and browse cakes. It’s more of a production unit where we focus on the baking itself. The heat from the ovens combined with the Ludhiana humidity can be pretty intense. Our small group does everything from mixing the dough to loading the finished goods into trucks. We don't have any fancy titles or a big management structure. We just know what needs to be done. Sometimes the flour gets everywhere and we spend hours cleaning up. It’s hard work and it’s not always pretty. We just keep the ovens going and make sure the bread is baked. It’s just how we earn our living in this industrial belt.
