We are located in Building B-59, over in Sector H of Aliganj. It’s on the upper ground floor, so there are just a few steps to climb. Lucknow can be a busy place, but Aliganj has its own pace. The kitchen is tucked away in the back. We have a few stainless steel tables that we spend a lot of time scrubbing. The lighting isn't the best, but we know where everything is by heart. It’s a small operation. We don’t have a fleet of trucks or a massive staff. It’s just a handful of us. We spend our mornings getting the ovens ready and the rest of the day keeping up with things. The walls are a plain white, and they get stained near the stove. We try to keep it clean, but baking is a messy business. Sometimes the delivery bikes block the entrance, which can be annoying for the neighbors. We try to move them quickly. We don't use any fancy techniques. It’s just the old ways of doing things that we learned a long time ago. The sink leaks a little bit, we have a bucket under it for now. It’s a practical workspace, not a showroom. We focus on the work at hand. By the end of the shift, we’re all pretty tired. We just lock up and head home to do it all again tomorrow. The clock on the wall has been stuck at four o'clock for months.
