Prashi Breadmakers & Confectionary is located over in Bibhuti Nagar. Rajesh Kumar Pandey is the one who keeps everything on track here. We focus on bread and some sweets. It’s a pretty basic setup we have. We aren't trying to be some fancy French pastry shop. We just make the kind of things people want to eat every day. The ovens start early in the morning, usually before the sun is even up. That's the only way to get the bread ready in time. It’s hot work and can be pretty tiring. We’ve been doing this for a while and have seen the neighborhood change quite a bit. Our place isn't anything special to look at from the outside. Inside, it’s all about the dough and the timers going off. We go through a lot of flour every week. Some days the dough doesn't rise the way you want it to, and you just have to start over. It’s frustrating, but it happens. We have a small group of people who help out with the baking and the cleaning. There is always a lot of cleaning to do in a bakery. We don't use any fancy marketing tricks. We just put the bread out and hope people like it. It’s a simple way to spend the day. We’re just happy to be working in Bibhuti Nagar. Most of our regulars know to come by early if they want the stuff while it is still warm from the oven.
