In Metrocity Papermill Colony, things move pretty fast but we try to keep it simple here at Garden Bakery Private Limited. Our spot at T18 1-1B is where most of the work happens every single day. Usually, the ovens get going early when most people in Nishatganj are still asleep. You can smell the bread from the corner of the street. It is not a very fancy setup, just a lot of trays and bags of flour sitting around the workspace. We spend a lot of time checking the timers and making sure the crust looks right before anything goes out. Sometimes the humidity in the colony makes the dough act up, but you learn to deal with it over the years. We have a few staff members who have been around since the start. They know exactly how the old machines sound when they are running hot. It gets a bit crowded in the back during the afternoon rush. We just try to get the orders boxed up and ready for whoever is stopping by. The floor usually has a bit of flour dust on it by noon. It’s a lot of physical work, lifting heavy sacks and standing by the heat. We don't have a big office or anything like that. Just the counter and the kitchen where the real stuff happens. People know us by the sign out front and the regulars who pop in for their daily loaf. It's just a normal day here.
