Our building is right on Kurukshetra Road. It’s a pretty loud spot because of all the heavy trucks and cars that pass by at all hours of the day and night. Inside, things are a bit different. It’s mostly about the baking. We’ve got the big mixers and the ovens that run for hours. There’s usually a fine layer of flour on almost everything, from the tables to the floor. We try to keep it tidy but when you're working with that much dough, it’s hard to keep it perfect. The air feels heavy and warm, especially when the batches are coming out. We start our shifts early, usually when it’s still dark outside, to get everything ready. The guys wear their old work clothes because there’s no point in wearing anything nice when you’re dealing with grease and flour all day. We have a small area in the back where we keep the finished biscuits in crates before they go out. The building itself is just a plain structure along the road. It doesn't have any big signs or bright lights. Most people know we are here just by the smell of the baking that drifts out when we open the loading doors. It’s a lot of repetitive work, but it’s what we do. We just keep the machines running and handle the daily tasks as they come. It’s just life on Kurukshetra Road.
